My love of food has led me to many interesting places and a few days ago my tastebuds took a trip to Scandinavia courtesy of the Michelin Guide. At the official launch party for the 2014 NYC guide, I was invited to plate a dish with Chef Marcus Jernmark of Aquavit. Awarded one highly coveted Michelin star, the guide describes Aquavit as "Known for its distinct modern style, Aquavit is undeniably cool." A native of Gothenburg, Sweden, Chef Jernmark is dedicated to sharing the beauty of seasonal Nordic fare and has a talent for combining traditional techniques, such as pickling and preserving, with modern touches.

At the Michelin event, Chef Jernmark served a spectacular dish: Live Diver Scallop, Sea Urchin, Cucumber and Frosted Apple. It was incredibly refreshing, elegant, and playful. I was supposed to help plate the dish but my true talent is tasting! I've never been to Aquavit, but Chef Jernmark's dish totally intrigued me and it has been added to my list of must-visit Michelin restaurants.
