The most recent catalyst for my spontaneous swirls and twirls was an invitation to attend a private tasting of Nicolas Feuillatte champagne led by Chief Winemaker David Hénault at Le Cirque. Really, does it get better than that?
I'm already a big fan of Nicolas Feuillatte bubbly but meeting the winemaker always adds another dimension to the tasting experience. Chief Winemaker David Hénault's presentation was playful and elegant - the very same words that I would use to describe his creations.

Our tasting included a flight of Nicolas Feuillatte rosé champagnes. Although the beautiful jewel pink color is what initially catches the eye, Hénault insisted that he does not focus on the color when creating rosé - in his world taste rules. The Nicolas Feuillatte Brut Rosé is an ideal wine for the warmer seasons. Aged 2-3 years, this blend of Pinot Noir, Chardonnay, and Petit Meunier meets Henault's criteria of being fresh, fruity, and easy to drink. Bursting with beautiful berry notes but not overly sweet, this wine makes even the most casual meal a trés chic celebration! Priced at around $41.95.
For a truly diva worthy wine, I highly recommend the Palmes d'Or Rosé Vintage. The stunning bottle was inspired by an opera diva that beguiled Nicolas Feuillatte with her beauty, talent, and ever-present strand of black pearls. Within the bottle is an extraordinary rosé crafted from 100% Pinot Noir grapes. Cellar aged for 5 years, it is crafted using an increasingly rare technique known as "rosé de saignée." Hénault described this process as a bleeding of the grapes where a portion of Pinot Noir is left to macerate on its skins for a few hours before fermentation and just long enough to color the juices. This nectar is added to the blended wine and infuses it with delicate shades of pink and accentuates the fruit aromas. The color of raspberry with aromas of fruit and spice, Palmes d'Or Rosé Vintage is very voluptuous and luscious. Priced at about $199.95.
